This standard establishes the minimum frequency for kitchen exhaust cleanings; however, some local jurisdictions may require more frequent service. In these high-volume situations where the clients perform daily maintenance, we are able to significantly adjust pricing, so it makes sense to proactively keep your exhaust system clean. We also are willing to work with each client of frequency. While we recommend professional service intervals on all of our inspections, it is ultimately the building owner's responsibility to determine and perform cleanings in accordance with the NFPA 96 standard. It is crucial that the frequency a client chooses is maintained and the certificate on the hood is current as this is the first thing a Fire Marshal or Health Inspector looks at when evaluating if equipment in a commercial kitchen is being properly maintained. A dead giveaway is an out of service sticker on the hood, fire suppression system and on the kitchen fire extinguisher.
